SPICED BOURBON CHICKEN THIGHS

HERE’S WTF YOU NEED:
 ¼ cup butter
 8 chicken thighs, bone in and skin on
 1 onion, diced
 6 cloves garlic, peeled and smashed
 1 2-inch stick cinnamon
 1 bay leaf
 1 cup Jack Tennessee Fire (if you want a party in your mouth) or Tennessee Honey (if you’d like a more refined party)
 ¾ cup orange juice
 ¼ cup dark brown sugar
 1 cup peach preserves
 1 cup water
 1 cup canned peaches, in a light syrup
 1 tbsp smoked paprika
 kosher salt to taste
 2 stalks green onions, thinly sliced
 serve this deliciousness with sticky rice

HERE’S WTF YOU DO:

Pre-heat the oven to 300°F. In a deep pan (which you can also chuck into the oven later), melt the butter and lay your chicken thighs down, and brown that skin, crisp it up. Once done, remove and lay on a plate.

Drain off half (or the excess) fat and on low heat then add to the pan onion, crushed garlic, the spices and fry this till translucent and fragrant. Mix together the bourbon and orange juice, and very carefully pour this into the pan. Give it a stir and let this simmer for a few minutes until slightly reduced, around 3-5 minutes.

Stir in the brown sugar, peach preserves, water and then chuck in the canned peaches, paprika, salt and mix until combined well. Return the chicken to the pot, skin side up and cover tightly.

Pop this into the oven for 1 hour, remove and serve immediately with sticky rice, garnishing with green onions.
