ONE FOR THE VEGANS, CHEESY CAULIFLOWER, CORN AND SPINACH CASSEROLE

HERE'S WTF YOU NEED:
 4 cups cauliflower florets, bite sized (par-boiled)
 2 cups sweet canned corn, drained
 2 cups baby spinach
 1 cup butter
 2 cups breadcrumbs
 2 tbsp all-purpose flour
 1 tsp garlic powder
 1 tsp onion powder
 1 cup full fat milk
 1 cup white wine
 4 cups white Cheddar
 2 cups Pepper Jack or Monterey Jack
 ½ cup buttermilk
 salt and crushed black pepper to taste
 1 tsp herbs of your choice

Pre-heat your oven to 375°F. Butter a casserole dish, dump your veggies, trying to be even about its distribution.

Melt 1/2 the cup of butter and stir the breadcrumbs, brown slightly and leave aside to cool.

Melt the remaining butter in a pan on low heat, add the flour in and with a whisk mix it well and let it fry until nutty and fragrant. Add the garlic and onion powder and give it a mix, slowly pouring in the milk whilst whisking making sure there are no lumps.

Then in goes the white wine, 2 cups of white cheddar and the Pepper Jack and mix until melted and it thickens. Take off heat and add the buttermilk and salt and pepper to taste.

Pour this all over the casserole. Mix the remaining 2 cups of cheddar with the cooled breadcrumbs, add the herbs in too and put on top of the casserole. Bake for 30-40 minutes checking to see that it doesn't burn or bubble over.
