Clean, wash and dry your wings. Season the flour with salt in a big bowl and pour about 3-inches of oil into a heavy deep bottomed pot. Add your wing to the flour mix and toss to coat. Start heating your oil on a high flame, but don't plop your wings in until the oil is nice and hot.
Oh but how do you figure this out? Stick a wooden chopstick into the hot oil, if you see bubbles you know it’s ready. Set the flame to a medium flame then, wait a minute more and start gently dropping your wings into the pot. Fry until golden brown (approximately 10-12 minutes), set on a paper towel and drain.
Sauce#1- Add butter and chilli flakes to a sauce pan and fry for a minute. To this, add in the crushed garlic and fry for a few seconds more. Then in goes the soy sauce, honey, vinegar and let this come to a slight simmer. As soon as it starts bubbling, increase the flame, throw in 8 wings and toss for a minute. Take off the flame, drizzle over the ranch sauce and serve up.
Sauce#2- Melt the butter in a small pan, add the blitzed onions and jalapeños and fry until golden-brown and fragrant. In goes the peanuts, water and curry paste, let this simmer for 3 minutes. Throw the wings in, toss for a minute, garnish with sesame oil and serve.
Sauce#3- Melt butter in a pan along with the cracked pepper, red chillies, tomato paste, salt, cayenne pepper, garlic, sichuan peppers for a few minutes. The throw in the brown sugar, and wings and toss. Garnish with spring onions and serve.
