DEVILED EGGS

HERE’S WTF YOU NEED:
 9 eggs (at room temperature)
 ice bath for your eggs
 ½ cup mayonnaise
 1 tbsp sriracha sauce
 ½ cup cream cheese
 1 tbsp Dijon mustard
 3 tbsp chives, finely diced
 1 shallot, finely diced
 1 tsp smoked paprika
 salt and crushed white pepper

HERE’S WTF YOU DO:

You want to start by boiling your eggs for 12 minutes. Set aside to cool by dunking them in an ice bath. Once your eggs are cooled, peel and halve them gently.

Very slowly scoop out the yolks into a bowl and mix them with the mayonnaise, sriracha, cream cheese, mustard, 2 tbsp chives, shallot, paprika and mix well. Season with salt and pepper to taste.

Dump into a piping bag if you want to be fancy and pipe into eggs. Else, scoop into the egg halves, top with leftover chives and serve up!
