HERE’S WTF YOU NEED:
 1 kg boneless pork shoulder
 3 tbsp chilli flakes
 3 tbsp smoked paprika
 1 tbsp allspice powder
 3 tbsp salt (and more)
 2 tbsp brown sugar
 6 red onions, sliced
 9 cloves garlic, crushed
 5 tbsp apple cider vinegar
 3 tbsp tomato paste
 500 ml Coca-Cola
 100 ml dark rum
 50 g butter
 aluminium foil
 100 ml apple cider
 Sour Cream
 8 Tacos

HERE’S WTF YOU DO:

This makes a good party dish because you can tuck it away in the oven a few hours before the party, and poof it’s magically ready when you want it.

Oven on and place a large baking dish inside to heat for 10 minutes.

Meanwhile, get your marinade ready. Here we want to prep the dry rub and the wet mix separately.

Mix together the chilli flakes, smoked paprika, all spice powder, salt and brown sugar. Rub it in well into your pork. Then slice up 3 onions and crush your garlic and set aside.

In a large bowl, mix together the 2 tbsp apple cider vinegar, tomato paste, coke and dark rum.

Now, take that baking dish out, drop the butter in and swirl around letting it melt. Place your Pork in, surrounding it with the onion and garlic. Pour your liquid in and cover with silver foil. Pop into the oven for 4 hours. After 4 hours, take out, remove the foil and pop back in for 1 hour.

For the pickled onions, you require to slice up those onions and place them in the apple cider and remaining vinegar. Season generously with salt and leave aside.

Ooh it’s going to smell so good. Take the pork out, break it out, it’ll melt. And create and assemble line. Tacos + pulled pork + sour cream + pickled onions.
