TRUFFLE SHROOM BITES

Can we put truffle on everything?

HERE’S WTF YOU NEED:
 a hunka butter
 2 cups breadcrumbs
 500 g assorted wild shrooms (your choice)
 ½ cup walnuts, chopped
 1 tbsp garlic powder
 1 tsp salt
 ½ tsp crushed black pepper powder
 3 tbsp white truffle oil
 1 cup parmesan, grated
 ½ cup cream cheese
 1 egg, beaten
 12 mini bread rolls

HERE’S WTF YOU DO:

Melt 1 tbsp of butter in a pan and toast the breadcrumbs until nutty and golden brown. Set aside in a quarter plate to cool.

In the same pan, melt 1/4 cup butter, increase the flame and on really high fire, toss the mushrooms for 10 minutes. Or go longer if your mushrooms are giving out a lot of juice. We want them to brown and dry up.

Then let your fried mushrooms cool for a few minutes before blitzing them together with the nuts, garlic powder, salt, truffle oil, parmesan, cream cheese and cooking cream. Do this only for a few seconds, we only want the ingredients to come together. We don't want them to a paste.

Now mix this together with half of the breadcrumbs and set aside in the fridge for 20 minutes.

Pre-heat your oven to 350°F, and shape your refrigerated mushroom mix into balls.

Dip each ball in the beaten egg, then in the remaining breadcrumbs and place on a parchment sheet, and bake for 15 minutes.

For the last 5 minutes, pop your bread rolls into the oven to warm and slightly toast.

All done? Now halve your bread rolls, smash each truffle ball in the center. Now stuff that in your fuckin face!
