HERE’S WTF YOU NEED:
4 large pears, halved lengthways and cored
12 rashers cured pork, thinly sliced (substitute for back bacon or last resort, prosciutto)
 3 tbsp unsalted butter
¼ cup warm cloudberry syrup (substitute for honey or last resort, golden syrup)
crushed Himalayan pink salt and pink peppercorns
serve with a light leafy green salad

HERE’S WTF YOU DO:
1

Wrap each pear half with 3 strips of pork, tucking the ends inside to keep them together.

2

In a large pan, melt the butter and let it brown, giving off a nutty fragrance. Place the pears in the pan, flat side down and let this cook for 3-5 minutes, until the pork has crisped up. Flip the pears and cook on each rounded side for 2-3 minutes until browned.

3

Plate up, drizzle with warm cloudberry syrup and serve alongside a light salad, seasoning it to taste with the pink salt and crushed pink pepper.
