In a bowl, mix together the crushed Oreos and melted butter. Press this mix onto the bottom and about half an inch up the sides of a buttered tart tin. Set in the fridge to chill and harden.
Now for the filling, start by first sprinkling the gelatin over the cool strawberry cocktail mix and set aside for 5 minutes. Whip your cream cheese until smooth, and then add the sugar, lime juice and zest to it and mix thoroughly. Then in a separate bowl, whip your mother fucking cream until it forms stiff peaks. Slowly, fold the two together until smooth, creamy but also firm.
Then pop your gelatin mix into the microwave for 90 seconds, stirring it every 30 seconds. Let this cool, then very gently pour this into the creamy mix and gently mix the two together.
Pour the filling over the chilled oreo crust, smoothening the top with the back of a spoon. Refrigerate for 3 hours.
Meanwhile for the topping, chop up your strawberries and add sugar, wine and mix well. Leave to chill for 3 hours.
Top the cheesecake with the strawberries just before serving.
