LOADED SWEET POTATO SKINS

We’d never say no to mouthful of LOADed baked potato skins.

HERE’S WTF YOU NEED:
 4 large sweet potatoes, skin on
 1 cup fried chorizo, chopped into mince like bits (reserve the chorizo oil)
 ¼ cup chorizo oil (to brush onto the skin)
 salt (according to taste)
 2 cups red Leicester, grated (divided into 2 portions)
 1 cup tomato salsa
 chilli flakes (according to taste)
 ½ cup sour cream
 ¼ cup green onions, chopped
 ½ cup Doritos, crushed

HERE’S WTF YOU DO:

Pre-heat your oven to 375°F. Wash your sweet potatoes well, prick them with a fork and bake on a parchment lined sheet for 40-60 minutes until soft when pricked.

Meanwhile, fry your chorizo until crisp and browned, saving the oil for later use. Makes sure you cut up your chorizo into mince like crispy bits.

Once your sweet potatoes are done, let them cool for 20 minutes and then slice them lengthways, scooping the potato out, whilst leaving roughly 1/4 inch of potato border left on the skin.

Light up your oven to heat again, then brush some chorizo oil on the inside and outside of each potato skin, lay them on the parchment lined tray, sprinkle each skin with salt and grill them for 5 minutes.

Take them out, leaving the oven on and very gently brush the remaining chorizo oil all over.

Then layer with 1 portion grated cheese, the fried chorizo bits, the sweet potato flesh, salsa, chilli flakes and top with the remaining cheese.

Pop into the oven for 3 more minutes. Take out of the oven and let it cool a few minutes, topping with sour cream, spring onions and the crushed Doritos just before serving.
