 50 g Grana Padano, grated
 salt and crushed pepper to taste

In a deep dish and over low flame, melt the butter and add in the flour. Stir this about gently until it releases a nutty aroma.

Add in, slowly, your room temperature cream and whist vigorously ensuring no lumps.

Next goes in the milk and stir, it should start to resemble a velvety smooth sauce. Let this simmer on low heat for a few minutes, until it starts to thicken slightly and comes to a boil. Make sure you stir this goodness constantly to avoid clumping.

To this, add in the Grana Padano, salt, pepper and nutmeg take off the heat. It's ready!
