THE ULTIMATE BREAKFAST SANDWICH

HERE’S WTF YOU NEED:
 4 rashers bacon, minced
 1 tomato, diced
 1 clove garlic, minced
 1 tsp dried rosemary
 salt and crushed black pepper
 lots of butter
 6 shrooms, quartered
 olive oil
 2 eggs
 2 brioche buns
 lots of mature red cheddar, grated

HERE’S WTF YOU DO:

Fry the chopped-up bacon for a min, then lower flame and add in the tomatoes & garlic and fry until tomatoes soften and turn mushy. Season with rosemary, salt and pepper according to taste and then set aside your tomato-bacon chutney.

In a new pan over a high flame, add a hunk of butter and toss in the mushrooms for a few mins, or until reduced in size and set aside.

Meanwhile, spread butter over the bread and toast slightly in that same pan. You know it’s done when it’s slightly golden brown but still soft. We’re not going for crunchy here folks! Once done, spread more butter over and set aside.

Fry the eggs next. Lower the heat and for each egg, heat a little olive oil, then add butter to it and swirl around the pan. When hot, break an egg into it and fry. As the edges turn golden brown and crispy, start spooning some of the buttery goodness over the yolk. Ensure the yolk is mid done. It has to be runny, but not too runny. Repeat with the next egg.

Plate up. Spread the bacon tomato goodness on each sandwich, add the egg, top with the mushrooms and generously sprinkle grated cheddar over the top.
