EGG AND CHORIZO TACOS

HERE’S WTF YOU NEED:
 12 rashers bacon
 6 cloves garlic, minced
 ¼ cup maple syrup (or substitute for honey)
 1 cup chorizo, chopped
 1 avocado, smashed
 1 tsp lemon juice
 ¼ cup onion, chopped
 1 tbsp coriander leaves, minced
 a hunka butter (and more)
 2 tomatoes, diced
 2 eggs, scrambled
 a shit ton of red cheddar, grated
 salt and red chilli flakes
 6 taco shells (we like them crispy, but you do you boo)

HERE’S WTF YOU DO:

Oven on, parchment paper on tray and lay your bacon down. Top with the garlic, chilli flakes and maple syrup. Honey will do just fine too. Should take around 8 minutes each side. Once done, set aside to cool and then go ahead and crumble.

While your bacon is cooking, fry up your chorizo. And make your Guacamole. Remember, multitask. Just don’t get burnt. To make your cheat Guacamole, mash avocado, add lemon juice, chilli flakes, chopped onion and cilantro.

Watch that chorizo, we don’t want to burn it. Take outta the pan once cooked, reserve all the leftover juice (we mean the oil, who are we kidding), and plop the tomatoes and garlic in there, reduce flame and let it fry up. Add salt and chilli flakes, this should take around 10 minutes to cook up.

Now, scramble the fuck outta those eggs, we kid, always remember TLC! Plop butter into a pan, then go in the eggs and stir away adding red cheddar as it cooks, until it thickens and sets. We don’t want it too dry.

You’re all done, plate up. Stuff your tacos with the scrambled eggs, top with the chorizo-tomato goodness and guacamole, and finally garnish with the crumbled maple bacon. Sprinkle more cheese over, and lastly, don’t choke while stuffing your fat face!
