DESI STYLE CHILLI CHICKEN

This makes it on my list of top ten foods I love when drunk. Hands down!

HERE’S WTF YOU NEED:
 canola oil
 4 onions, sliced
 water
 2 rotisserie chickens, de-boned and shredded
 2 tbsp ginger-garlic paste
 2 tbsp tomato paste
 50 g butter
 2 green peppers, sliced
 salt to taste
 as many wraps or flatbread as you want

HERE’S WTF YOU DO:

Shred the fuck outta the chicken. And STFU, if my drunk ass can do it, so can yours!

Get some oil going in a large pan, on medium heat, fry them sliced onions for 2-3 mins, lower heat and keep frying, tossing intermittently. After about 10 minutes, add 1/4 a cup of water and let it further cook. Be patient, we’re trying to caramelize, but also not caramelize them. Top with 1/4 cup water when needed until the onions turn brownish and semi-caramelized. Should take around 20 mins in total.

At this point, add in the ginger-garlic paste, tomato paste and chilli powder and mix well. Let this cook for a further 5 minutes. Then dump in the shredded chicken, cook for 10 minutes, drying it up, lastly adding the chunk of butter, adding in the green peppers, turning up the heat and frying for a few minutes, so that the veggie is still crunchy.

Serve up while still how alongside the wraps.
