Sounds classy, and it is. This is a cozy Christmas or naughty New Years dip!
Pop the bacon onto a baking tray and into the over for 20 minutes, turning once halfway. Once done and crispy, let cool.
Meanwhile, melt butter along with garlic over a low flame. Add in the shallots and toss gently for 2 minutes. Sprinkle flour over and toss. Next, pour in the cooking cream and stir well, making sure everything is mixed well. Chuck in the cheese and stir to let it melt.
Pour in your white wine and season with salt, pepper and the herb mix. Stir this around for 5 minutes, all the while on low flame letting it thicken slightly.
Drop in the olives and sun-dried tomato, give it one last stir and set aside until the bacon is done. Lastly, roughly chop up the bacon and add the bits to the dip.
