Nothing like smoking your ingredients to elevate the flavour of a dish.
Quick smoke trick? On a direct medium flame burner and with a pair of tongs, place your bell peppers and chilli pepper down. Giving each side only a few minutes each, turn your peppers over and over and they will start to blister and charr, aroma filling the air. They’re done, let them cool.
Thereafter, pop your garlic, paprika and olive oil into the microwave for 3 minutes on high heat. Make sure you do this with 15 second intervals after every 60 seconds.
Meanwhile, toast your nuts on slow fire and in a dry pan until browned and fragrant.
Now time to blend, in goes the yogurt, honey, salt and cooled peppers, nuts and garlic-paprika infused olive mix. Blend all together, slowly adding the extra virgin olive oil until amalgamated.
Serve up with chips of choice, we like ‘Spicy Sweet Chilli Doritos’.
